Recipe: baked brussels sprout casserole

This is a tasty, easy way to prepare a nutritious, often overlooked vegetable. Pair with roasted chicken or fish and a baked sweet potato for a simple and delicious meal.

Makes 6 servings

Ingredients

1/4 cup wheat germ + 1/4 cup bread crumbs
2 T trans fat-free spread, melted
1/4 tsp black pepper, freshly ground
1 tsp salt
20 oz. package of frozen Brussels sprouts, partially thawed

Preheat oven to 350 degrees F. Drain Brussels sprouts. Blend all ingredients except Brussels sprouts in 2 quart casserole. Add sprouts to casserole, toss to combine, and bake 45 minutes.
