Chef Kimberly Brock Brown prepared Parmesan Oven Fried Cod on Lowcountry Live Friday November 2nd. It's the great taste of crunchy 'fried' fish without the messy oil!
Parmesan Oven Fried Cod:
4 oz Bread Crumbs
3oz Parmesan Romano Shredded Cheese
1oz Parsley chopped
½ t Garlic Powder
½ t Grd White Pepper
4 oz Lite Italian Dressing
1 ½ lbs Raw Cod Fillets
Pan Spray
Directions:
Combine all of the dry ingredients for breading.
Pour the dressing into a shallow pan for dredging.
Dip the fish in the dressing. Dredge in the seasoned bread crumbs to coat lightly.
Place the fillets on a lightly oiled baking sheet.
Bake uncovered at 375 F for 15 to 25 min, depending on the thickness of the fillets or when the internal temp reaches 145 F
