Tulsa Restaurant Is Expanding to Frozen Foods

Posted: Updated:

The recession years were tough for local restaurants.

But now a long-time Tulsa restaurant owner, is taking a calculated risk and expanding his food offerings.

Buzz Dalesandro is taking his recipes into stores.

His Italian restaurant has been a local fixture for almost 20-years, but he doesn't like to work 12-hour days in the kitchen anymore.

So he's starting a new career, by making his salad dressing available to everyone.

He's selling it frozen, in stores like Petty's Find Foods.

He chose frozen delivery because ingredients like garlic, don't taste the same, once they're pasteurized.

The customer takes it home, thaws it out, adds olive oil and its ready for the table.

Dalesandro plans to follow up by selling pesto and red sauce the same way.

The dressing that's sold locally is made in the restaurant.

But he has a commercial processor in Oklahoma City doing the rest of the work.
