Pinckney student heads to DC for First Lady lunch challenge

CHARLESTON, S.C. (WCIV) -- A Pinckney Elementary School student was among 54 students across the country selected to join First Lady Michelle Obama in a healthy lunch challenge.

Corbin Jackson was announced as South Carolina's representative in a nationwide recipe challenge sponsored by OBama, Epicurious, the Department of Education and the Department of Agriculture. The lunch recipe challenge is part of Obama's "Let's Move!" initiative.

At a state dinner for the 54 winners on July 9 hosted by the First Lady, the winning dishes will be served. After lunch, the group will tour the White House kitchen garden.

"Our Kids' State Dinner is one of my favorite events of the year, and the kid chefs who come from around the country never cease to impress and inspire me with their creativity and ingenuity.  I'm counting down the days until the winners join me at the White House to celebrate these healthy and delicious meals that kids everywhere will love," Obama said.

In its second year, the Healthy Lunchtime Challenge invited students between the ages of 8 and 12 to work with a parent or guardian in crafting a lunch recipe that is healthy, affordable, original and delicious.

Each recipe sticks to the guidelines set up by the USDA's MyPlate to guarantee the health benefits of each recipe. That means each entry had to represent all of the food groups and half of the plate had to be made up of fruits and vegetables.

ABCNews4 is working to get the recipe Jackson submitted.
