Chef Laurie's Recipe: Fish Tacos with Avocado Salsa

CHARLESTON, S.C. (WCIV) - Chef Laurie's prepared Fish Tacos with Avocado Salsa

 

½  lb flounder, cod or haddock sliced into ½ in strips
2 Tablespoons Cajun seasoning

4 Hard or soft taco shells

1 cup fresh salsa

½ cup low fat sour cream

1 cup shredded lettuce or cabbage

 

Salsa:

1 pint of grape tomatoes

1 small red, yellow or green bell pepper, diced

1 small red onion, diced

½ cup loosely packed fresh cilantro leaves

1 teaspoon salt

pinch of ground cumin

1 large avocado, diced

 

1.  Preheat oven to 425° degrees.
2.  Line a cookie sheet with parchment paper.

3.  Lay fish filets on parchment in a single layer on one side of the cookie sheet.

4.  Sprinkle fish filets with Cajun seasoning.

5.  Lay taco shells on parchment next to the fish.

6.  Lightly spray fish and taco shells with olive oil.

7.  Place in oven and bake for 8 minutes or until fish is just cooked through. Cool slightly

 

Salsa:

  1. Place all ingredients except for the avocado in the bowl of a food processor.
  2. Pulse until chopped fine.
  3. Add salsa to a bowl and add the diced avocado.
  4. Fill taco shells with the fish, salsa and lettuce.

 

Makes 4 servings
