Chef Kim's recipes: Spicy Shrimp Cocktail and Fruit and Cheese Bruschetta

CHARLESTON, S.C. (WCIV) --  Chef Kimberly Brock-Brown is back at Lowcountry Live with a pair of great recipes -- Spicy Shrimp Cocktail and Fruit and Cheese Bruschetta.

Spicy Shrimp Cocktail
6 servings
1 lb Lg Shrimp peeled & deveined
1 T Seafood Seasoning
½ t Smoked Paprika and extra for rimming glasses ½ t Red Pepper Flakes
2 Cloves Garlic minced
1 Lemon zested and juiced

1 Avocado diced
8oz Black Olives
8oz Cocktail Onions
24 oz Tomato Juice or Bloody Mary Mixer- Chilled
1 Lime Sliced
8 oz Vodka or Gin or Tequila Chilled - Optional
6 skewers

In plastic bag put the first 6 ingredients in to marinate for 20 minutes to 1 hour. Skewer 6 sticks and grill until done. About 3 minutes flip and finish cooking.
Rim glasses with lime and paprika
In each glass, layer the avocado, onion and olives. Add alcohol shot to each glass. Add tomato juice. Add grilled shrimp and lime garnish

Fruit & Cheese Bruschetta
1Baguette Sliced ¼"
8oz Mascarpone Cheese
1T Honey
2 Kiwi Diced
1 Mango Diced
1 Plum Diced
*Or your favorite fruit choices
Mint or Basil Leaves Chopped

Toast or grill the sliced baguette. Combine the honey and mascarpone and spread on the toasted baguettes.  Combine the fruit and mint or basil and top the cheese covered baguette
