Chef Kim's recipes: Sweet potato and pear casserole

CHARLESTON, S.C. (WCIV) -- This week Chef Kim puts together a delicious and healthy casserole that's perfect for the holidays.

3 Sweet Potatoes

4oz Butter softened

½  tsp Ginger

½ tsp Cinnamon

1oz Honey

8oz Cream Cheese

2 Pears diced

4oz Orange Juice

6oz Pecans or Walnuts chopped


Bake Sweet Potatoes until tender. Dice Pears and place in the Orange Juice.

Beat the Cream Cheese until smooth. Add the Butter, Ginger, Cinnamon, Honey.

Peel and add the baked Sweet Potatoes.

Fold in the Pears & juice.

Place in a buttered casserole dish and top with chopped Pecans or Walnuts. Bake 350F for 15 min or until warmed throughout reaching 145F

Serve & enjoy!
