Black Bean & Couscous Salad

CHARLESTON, S.C. (WCIV) -- Here's a simple recipe that can be the start of healthy eating for the new year. It's great as a salad or side dish as it has protein and carbs already. Adding more veggies to make it a more complete meal is also an option.

1 ¼ Cup Veggie Stock

1 Cup Couscous

3 OZ Olive Oil

2 OZ Fresh Lime Juice

2 tsp Red Wine Vinegar

1 tsp Cumin

¼  Cup Scallions chopped

¼ Cup Corn

2 Cans Black Beans rinsed

 

Prepare Couscous according to package directions.

 

Whisk together oil, lime juice, vinegar and cumin. Add remaining ingredients, toss to mix flavors.

Add fluffed couscous and mix. Chill and serve or serve warm.

 

Serve with grilled chicken, fish or shrimp or enjoy as is.
